Escarpment Laboratories - Thompson Saison Yeast
This saison strain hails from southern Belgium and creates a rustic saison with lots of pepper and spice. While this strain can create wonderful flavours, it loves the heat and failure to do so may result in lower than expected attenuation. Pitch at around 20 - 22°C, allow it to get up to 25 - 27°C and keep it there for best results.
