It is added to the wort or must before fermentation to help clarify and remove unwanted particles, such as proteins and other haze-causing compounds. Bentonite is a negatively charged clay that attracts positively charged particles in the wort, causing them to clump together and settle out. Add 2 tsp to 1/2 cup of warm water and re-hydrate for 24 hours before adding to wort/must. Use 1-2 tablespoons of re-hydrated slurry per gallon.
