Bottom-fermenting Lager Yeasts (Saccharomyces pastorianus): These cool cats (ideally 48-55°F, 9-13°C) prefer the bottom of the fermenter and produce clean, crisp lagers. Lower in ester production compared to ales, resulting in a smoother taste. Flocculation (settling) is typically high for easy clearing. Perfect for pilsners, helles, Vienna lagers, and other classic lager styles.
