A regional variation on the white beer style from Northern Germany, dating back to at least the 16th century. The fermentation uses a mixture of yeast and bacteria, that creates the lactic acid taste, a distinguishing feature of the style.
CAUTION! Lactobacillus can survive on small scratches in plastic equipment and contaminate future batches. We recommend thoroughly cleaning and sanitizing all equipment used to make beers featuring lactobacillus, or use a dedicated souring equipment kit.
